Za'atar Roasted Carrots with Feta Dip

Ingredients

  • 1 lb carrots, peeled
  • 3 tbsp olive oil
  • 1 tbsp za'atar spice
  • 1/4 tsp cumin
  • Salt u0026 pepper

Feta Dip

  • 1/2 cup feta cheese
  • 3 tbsp ricotta
  • 2 tsp olive oil
  • 1 tbsp lemon juice
  • Pinch salt u0026 pepper

Top With

  • 1 tbsp chopped fresh mint
  • 2 tbsp chopped fresh parsley
  • Olive oil
  • Date syrup or honey

Directions

  1. Preheat the oven to 400 F
  2. Slice the carrots diagonally and toss them in a bowl with the olive oil, za'atar, cumin and a pinch of salt u0026 pepper. Mix well.
  3. Transfer to a baking sheet lined with parchment paper and spread the carrots so that they're not overlapping
  4. Bake for about 30 minutes, flipping the carrots halfway through
  5. While the carrots bake, prepare the feta dip by blending the feta cheese, ricotta, olive oil and a pinch of salt u0026 pepper in a food processor or blender until smooth
  6. Transfer the feta dip to a shallow plate or serving platter and spread along the bottom, then top with the carrots
  7. Garnish the dish with fresh chopped mint, parsley, a light drizzle of olive oil and a drizzle of date syrup
