Preheat the oven to 400 F
Slice the carrots diagonally and toss them in a bowl with the olive oil, za'atar, cumin and a pinch of salt u0026 pepper. Mix well.
Transfer to a baking sheet lined with parchment paper and spread the carrots so that they're not overlapping
Bake for about 30 minutes, flipping the carrots halfway through
While the carrots bake, prepare the feta dip by blending the feta cheese, ricotta, olive oil and a pinch of salt u0026 pepper in a food processor or blender until smooth
Transfer the feta dip to a shallow plate or serving platter and spread along the bottom, then top with the carrots
Garnish the dish with fresh chopped mint, parsley, a light drizzle of olive oil and a drizzle of date syrup
