Directions
Melt your chocolate chips in a bowl with 1 tsp of coconut oil in 30 second increments in the microwave.
Once smooth, whisk in your creamy coconut milk. Chill the mixture for at least 3 hours, until its thick and creamy. You can also prep this in advance and leave refrigerated overnight.
Once the pudding forms, layer it in a glass with dairy-free whipped cream and chopped berries. Top it with shaved dark chocolate.
The parfaits are best when made right before serving, otherwise the whipped cream will thin out and the berries will release liquid.
The pudding will stay fresh in the fridge for 4-5 days.
