Vegan Cashew Cheese Fries

Ingredients

  • 2 medium russet potatoes
  • 1 1/2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Spicy Cashew Cheese Sauce

  • 1/2 cup raw cashews
  • 1/4 cup + 2 tbsp almond milk, or other non-dairy milk + more if needed to blend
  • 1 1/2 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • 1 tsp sriracha
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 small jalapeño, to top

Directions

  1. Preheat oven to 375 F.
  2. Slice the potatoes into sticks, about 1/4u0022 thick.
  3. Toss with the black pepper, garlic powder, salt and olive oil and place on a greased sheet pan, don't overcrowd them.
  4. Bake for 35-40 minutes, flipping halfway through.
  5. In the meantime, blend together all sauce ingredients until smooth.
  6. Once fries are ready, top with cashew cheese sauce and chopped jalapeño.
  7. Store any extra sauce in the fridge for 3-4 days.
