Ingredients

lettuce, chopped

red bell pepper, thinly sliced

carrot, peeled and thinly sliced

shredded cabbage

cilantro, chopped

roasted cashews, or peanuts
▢

mint leaves, chopped
Peanut Sauce
▢

natural peanut butter
▢

tbsp
lime juice
▢

tbsp
coconut aminos or low sodium soy sauce
▢

tbsp
honey or pure maple syrup
▢

sriracha

ground ginger

of garlic, crushed

of water, or more if needed

Salt to taste
Directions
In a large bowl, whisk together the peanut sauce ingredients until smooth. If the sauce is on the thicker side, add in a couple more tbsp of water to thin.
Pour in all of the salad components and toss together with the sauce.
Serve with your favorite protein or as is!
