Take-out Style Sesame Noodles

Ingredients

  • 12 oz linguine or spaghetti, mine were whole wheat
  • 4 large carrots, thinly sliced
  • 1 small white onion, thinly sliced
  • 1/3 cup coconut aminos, or sub 1/3 cup low sodium soy sauce
  • 3 tbsp toasted sesame oil
  • 2 tbsp sesame seeds
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 3/4 tsp salt (add less if using soy sauce)
  • 1/2 tsp crushed red pepper

Directions

  1. Boil the noodles as instructed on package. Drain and rinse.
  2. In a large skillet, heat 1 tbsp of sesame oil and cook the carrots and onions on medium heat until soft, for about 10 minutes.
  3. Pour in the noodles and add in the seasoning, coconut aminos, remaining sesame oil, sesame seeds and vinegar.
  4. Toss together for about 5 minutes. Adjust seasoning to your liking.
  5. Serve fresh with your favorite protein!
