Sweet & Spicy Tofu and Broccoli

Ingredients

  • 1 block extra firm tofu
  • 1 tbsp tapioca flour, or substitute cornstarch, arrowroot or rice flour
  • 2 cups chopped broccoli, fresh or frozen
  • Olive oil
  • Salt u0026 pepper

Sweet u0026 Spicy Sauce

  • 1/3 cup fruit-sweetened apricot jam
  • 1/3 cup coconut aminos or 1/4 cup low-sodium soy
  • 1/4 cup water
  • 1 tbsp honey
  • 1 tsp red pepper flakes
  • 2 tsp sriracha
  • 2 cloves garlic, crushed
  • 2 tsp tapioca flour
  • 2 tbsp sesame seeds
  • Pinch salt

Directions

  1. Drain the tofu and pat dry. For crispier tofu, you can wrap it in a paper towel and press it with a heavy pan for 10-15 minutes.
  2. Cut the tofu into cubes and toss it with the tapioca flour and salt u0026 pepper in a bowl.
  3. Heat a large skillet on medium heat then add in the cooking oil.
  4. Cook the tofu for about 18-25 minutes, until brown on all sides. Flip every 4-5 minutes.
  5. Add in the 2 cups of broccoli florets at around 18 minutes, then finish cooking together for the last 5 minutes.
  6. While that cooks, whisk together all sauce ingredients in a small bowl.
  7. Once the broccoli has softened, pour in the sauce and let it simmer for 3-4 minutes to thicken.
  8. Top with sesame seeds and red pepper flakes and serve over rice.
