Spicy Peanut Tofu

Ingredients

  • 1 block extra firm tofu, 14 oz
  • 1/4 tsp salt
  • Cooking spray or oil

Peanut sauce

  • 1 tbsp natural peanut butter
  • 1/4 cup coconut aminos or soy sauce
  • 1/4 cup water
  • 1 tbsp pure maple syrup or honey
  • 1 clove of garlic, mashed
  • 1 tsp sriracha
  • 1/4 tsp salt
  • 1/2 tsp red pepper flakes
  • 1 tsp tapioca or arrowroot flour

Serve with:

  • Brown or white rice
  • Stir fry veggies- broccoli, carrots, onions, peppers

Directions

  1. Preheat oven to 375 F.
  2. Pat the tofu dry and cut into cubes.
  3. Place on a parchment lined baking sheet and spray each piece with cooking spray. Toss them around to coat evenly and top with salt.
  4. Bake for 40-45 minutes.
  5. Whisk together sauce ingredients in a small bowl.
  6. Pour into a medium saucepan over medium heat.
  7. Reduce heat to simmer and stir in your tofu. Mix together on a low flame for 2-3 minutes until fully coated.
