Ingredients

extra firm tofu, 14 oz

salt

Cooking spray or oil
Peanut sauce
▢

tbsp
natural peanut butter
▢
1/4
cup
coconut aminos or soy sauce
▢
1/4
cup
water
▢

tbsp
pure maple syrup or honey
▢

clove
of garlic, mashed
▢

tsp
sriracha
▢

tsp
salt

red pepper flakes

tapioca or arrowroot flour
Serve with:

Brown or white rice

Stir fry veggies- broccoli, carrots, onions, peppers
Directions
Preheat oven to 375 F.
Pat the tofu dry and cut into cubes.
Place on a parchment lined baking sheet and spray each piece with cooking spray. Toss them around to coat evenly and top with salt.
Bake for 40-45 minutes.
Whisk together sauce ingredients in a small bowl.
Pour into a medium saucepan over medium heat.
Reduce heat to simmer and stir in your tofu. Mix together on a low flame for 2-3 minutes until fully coated.
