Salmon Burgers with Spicy Slaw

Ingredients

  • 1 lb salmon, skin removed
  • 1/4 cup whole wheat breadcrumbs or panko crumbs, use gluten-free if needed
  • 1/4 cup coconut aminos or 2 tbsp low-sodium soy sauce
  • 2 stalks green onion, chopped
  • 1 tbsp dijon mustard
  • 1 tbsp sriracha
  • 1 tbsp sesame seeds
  • 1/2 tsp garlic powder
  • Handful fresh parsley, chopped
  • Pinch of salt u0026 pepper

Spicy Slaw

  • 2 cups shredded cabbage
  • 1 small jalapeno, thinly sliced
  • 2 tbsp mayo
  • 1 tbsp sriracha
  • Juice from 1/2 a lemon
  • Salt u0026 Pepper to taste

Spicy Mayo

  • 1/4 cup mayo
  • 2 tbsp sriracha

Serve with:

  • Pickled onions or sumac onions
  • Whole wheat bun, lettuce, avocado, tomatoes, pickles

Directions

  1. Grind the salmon in a food processor until fully chopped
  2. Transfer to a bowl and mix well with remaining ingredients
  3. Form into 4 palm sized burgers and grill on a lightly greased skillet for about 4-5 minutes per side on medium heat
  4. Toss together slaw ingredients and serve on top of burgers or as a side. Top with spicy mayo and add-ons of choice!
  5. You can freeze them cooked or uncooked for up to 3 months!
