In a large bowl or food processor, whisk together the peanut butter and maple syrup until smooth. Add in the rolled oats, peanuts, salt, chocolate chips, 2 tbsp of water and cinnamon if using, and pulse or whisk together to form a sticky batter.
Scoop out one tablespoon worth of dough and roll into balls using wet hands. Repeat with remaining batter.
Layer the energy bites onto a parchment lined plate or tray and freeze for 30 minutes until firm.
Keep stored in a ziplock or airtight container in the freezer for up to 3 months.
