Orange Creamsicle Chia Pudding

Ingredients

  • 1/2 cup chia seeds
  • 1 1/3 cup milk of choice
  • 1 cup unsweetened greek yogurt, or substitute a lower-sugar vanilla greek yogurt
  • 1/4 cup maple syrup
  • 1 tbsp vanilla extract
  • 2 tbsp orange zest

Toppings

  • Orange slices
  • Granola
  • Coconut flakes

Directions

  1. Add all of the chia pudding ingredients to a container and whisk them together until evenly incorporated.
  2. Refrigerate the chia pudding for at least 4 hours, or overnight to set.
  3. Remove from fridge when ready to serve and whisk again to break up any clumps. If the chia pudding is too thick, add an extra couple of tablespoons of milk as needed.
  4. Top with fruit and granola when ready to serve. The chia pudding can be refrigerated for up to 5 days.
