Using a vegetable peeler, shave off 2-3 pieces of a lemon peel, then slice the peel into thin strips.
Add the lemon strips to a small mixing bowl with the herbs, olive oil and red pepper flakes.
Cut the feta into 1" cubes, then add it to the oil mixture with the olives. Toss together to coat evenly.
You can serve right away, or let the feta marinate for a couple of hours in the fridge.
After refrigeration, let the feta sit at room temperature for at least 30 minutes before serving.
