Maple Pecan and Walnut Crusted Salmon

Ingredients

  • 2 lbs salmon
  • ¼ cup pecans
  • ¼ cup walnuts
  • ¼ cup parsley, chopped
  • 2 tbsp maple syrup
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • Olive oil

Top with

  • Microgreens
  • Pomegranate seeds

Directions

  1. Preheat the oven to 375 F
  2. Place the salmon onto a parchment lined sheet pan. Combine the spices together in a small bowl and press them into the salmon filet.
  3. Finely chop the walnuts and pecans using a sharp knife, or pulse in a food processor. Add the chopped nuts to a bowl with the maple syrup, parsley, and a drizzle of olive oil, about 1 tbsp. Combine together until evenly incorporated
  4. Press the crumb mixture into the salmon, making to sure evenly coat the fish. Lightly drizzle the top with olive oil.
  5. Bake your fish for around 20-25 minutes, depending on the size and thickness of the fish
  6. Garnish with microgreens and pomegranate seeds
