Maple Cinnamon Granola

Ingredients

  • 2 cups rolled oats
  • 1 cup chopped walnuts or pecans, I used 1/2 cup of each
  • 1/4 cup coconut oil, melted. Use refined oil for a neutral taste
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Directions

  1. Preheat the oven to 325 F.
  2. In a large bowl, combine the coconut oil, maple syrup, coconut sugar, cinnamon and vanilla extract and whisk until smooth.
  3. Fold in the oats, nuts, and salt and stir together until combined.
  4. Line a medium baking sheet with parchment paper and flatten the mixture on to the pan. Form one large section in the center of the sheet pan, pressing the mixture together so that it's compact.
  5. Bake for 25-30 minutes, until the top is golden brown.
  6. Let it cool completely, for at least 30-40 minutes before breaking into clusters.
  7. Store in an airtight container for up to 2 weeks.
