Lentil Salad with Lemon Vinaigrette

Ingredients

  • 1 1/2 cups cooked brown lentils or a 15.5 oz can
  • 2 persian cucumbers, diced
  • 1 cup grape tomatoes, diced
  • 1 avocado, diced
  • 3 radishes, sliced
  • 1/4 red onion, diced
  • 1 cup walnuts, chopped
  • 1/2 cup parsley, chopped
  • 1/2 cup crumbled feta cheese

Lemon Vinaigrette

  • 1/4 cup olive oil
  • Juice from 1 lemon
  • 1 tsp lemon zest
  • 1 clove garlic, crushed
  • 1 tsp honey
  • 1 tsp dijon mustard
  • Salt u0026 pepper

Directions

  1. Add the lentils to a bowl with the chopped veggies, feta, walnuts and parsley.
  2. Add the dressing ingredients to a small bowl or jar and whisk well.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve cold. Refrigerate for up to 3 days.
