Herbed Tuna Salad

Ingredients

  • 2 cans albacore tuna in water, 4 oz each
  • 2 1/2 tbsp mayonnaise
  • 1/2 tbsp dijon mustard
  • 1 stalk of celery, finely chopped
  • 1/4 red onion, finely chopped
  • 1 scallion, finely chopped
  • 1 tbsp chopped fresh dill
  • 2 tbsp chopped parsley
  • Juice from 1/2 a lemon + 1 tsp of lemon zest
  • 1/4 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • Optional: 2 tbsp chopped dill pickles
  • Olive oil, to drizzle

Directions

  1. Drain the tuna and add it to a bowl. Flake it with a fork to mash it well
  2. Mix in all of the ingredients and stir together until evenly combined. Finish off with a drizzle of olive oil when serving. Serve over a salad, on toast or in a wrap
  3. Keep refrigerated for up to 5 days.
