Add the tomatoes to a baking dish and toss them in a little olive oil, salt and pepper. Roast them for 10 minutes while you prepare the fish
In a small bowl, combine the breadcrumbs with the parsley, dill, garlic, lemon zest and a pinch of salt and pepper to create the herb crust
Once the tomatoes are out of the oven, place the fish fillets in the baking dish. Season them with salt and pepper.
Sprinkle the crumb mixture evenly over each piece of fish and press it into the top of the fish with your fingers. Drizzle a little olive oil over the tops of the fish
Bake for 15-18 minutes, until the fish is cooked through. I like to stick mine under the broiler for 2 minutes at the end.
