Add your chopped hearts of palm to a bowl with all of the veggies. I suggest choosing an avocado that's slightly firm and not too soft!
Toss the salad together then mix in the olive oil, lemon juice, crushed garlic, salt and pepper. Adjust the salt to your liking and enjoy with your favorite protein. I love topping mine with crumbled feta cheese
Leftovers will stay fresh in the fridge for 3-4 days
