Add all of the ingredients to a blender and blend until smooth. Start with 2 tbsp of olive oil and add another if the dressing isn't smooth. Adjust the salt as needed
Serve as a dip with veggies, summer rolls, grilled protein or as a salad dressing
The dressing can be made in advance and refrigerated for up to 5 days. If it thickens in the fridge, first give it a mix or shake to loosen up. If it's still too thick, add a tablespoon of water.
