Green Goddess Tofu Dressing

Ingredients

  • 1 block silken tofu, 16 oz
  • ⅓ cup parsley
  • ⅓ cup cilantro
  • ⅓ cup mint
  • ⅓ cup basil
  • 2 stalks of scallions
  • Juice from 1 ½ lemons
  • 2 -3 tbsp olive oil
  • 1 tsp honey (optional)
  • Pinch salt u0026 pepper

Directions

  1. Add all of the ingredients to a blender and blend until smooth. Start with 2 tbsp of olive oil and add another if the dressing isn't smooth. Adjust the salt as needed
  2. Serve as a dip with veggies, summer rolls, grilled protein or as a salad dressing
  3. The dressing can be made in advance and refrigerated for up to 5 days. If it thickens in the fridge, first give it a mix or shake to loosen up. If it's still too thick, add a tablespoon of water.
