Gluten-free Apple Walnut Loaf

Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup grated apple, about 1 medium apple
  • 1/2 cup coconut sugar
  • 1/4 cup liquid oil, like light olive oil or vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts
  • Thinly cut apple slices to top

Directions

  1. Preheat the oven to 350 F
  2. Add the eggs, applesauce, grated apple, coconut sugar, oil, vanilla and cinnamon to a large bowl and whisk together until smooth.
  3. Add in the almond flour, oat flour, baking soda, baking powder and salt and mix well until evenly incorporated.
  4. Fold in most of the walnuts, reserving some to top.
  5. Line a 9 x 5 loaf pan with parchment paper and pour the batter into the pan. Top the loaf with about 5-6 pieces of thinly shaved apples slightly overlapping at the tops - I use a vegetable peeler to shave off thin slices. Sprinkle on the remaining walnuts pieces.
  6. Bake the loaf for about 40-45 minutes on the middle rack, until a toothpick comes out clean. Let cool for 10-15 minutes, then slice and enjoy.
  7. Keep at room temperature for up to 3 days, or refrigerate for up to 1 week.
