Preheat the oven to 400 F.
Pat your tofu dry and cut it into cubes. Add it into a bowl with the soy sauce, tapioca flour, garlic powder and salt. Toss together to evenly coat
Transfer the tofu to a parchment lined sheet pan and drizzle with the olive oil
Bake for 30 minutes, flip and bake for an additional 20-25 minutes until brown.
While the tofu bakes, prepare your sauce by whisking together all ingredients together until smooth, except for the scallions
During the last 10 minutes of the tofu baking, heat a skillet on medium heat and add in the sauce. Cook it for about 4-5 minutes until it begins to thicken.
Once the tofu is ready and the sauce is thick, add the tofu into the sauce and stir together. Toss together on a low flame for about 2-3 minutes until its evenly coated
Garnish with the scallions and serve with rice or noodles and your favorite sides!
