Ingredients

Directions
Add the salmon to a food processor and pulse a few times to puree. You can leave a few small chunks for added texture if preferred.
Transfer the salmon to a bowl with 2 tbsp of the breadcrumbs, the feta cheese, chopped herbs, seasoning, mustard, lemon zest and egg. Mix well.
Oil your hands and shape the salmon mixture into 8 palm-sized patties, or about 10 slightly smaller ones.
Pour the remaining 1/2 cup of breadcrumbs into a bowl. Dip each salmon fritter into the breadcrumbs to coat both sides.
Heat a skillet on medium heat with about 1/4 cup of olive oil. Cook the fritters for 3-4 minutes per side on medium/high heat until browned.
Serve warm with garlic aioli, spicy mayo or greek yogurt
