Preheat your oven to 400 F, and line a baking sheet with parchment paper.
Cut your salmon into 1u0022 cubes and season lightly with salt u0026 pepper.
Mix the mayo, mustard, and lemon juice in a bowl, and toss in the salmon cubes until each piece is evenly coated.
In a separate bowl, mix together the almond flour and everything seasoning. Dip each piece of of salmon into the breading mixture to coat each side, then layer on your baking sheet. Repeat with remaining salmon.
Drizzle the bites with olive oil, and bake for 12-15 minutes, until the crust starts to brown. Let them rest for 2 minutes before touching.
Squeeze some fresh lemon juice once they're ready, and serve with your favorite dipping sauce!
