Easy Sheet Pan Salmon for Two

Ingredients

Salmon

  • 8-10 oz of salmon, or two individual fillets
  • 1 tsp chili powder
  • 1 clove garlic, crushed
  • 2 tbsp fresh lemon juice
  • 1 tsp olive oil
  • Salt u0026 pepper
  • Lemon slices

Potatoes

  • 12-14 baby potatoes, sliced in half
  • 1 tbsp olive oil
  • 1 clove garlic, crushed
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Baby Broccoli (Broccolini)

  • 8 oz baby broccoli, or substitute broccoli florets
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Preheat your oven to 375 F.
  2. Line a sheet pan with parchment paper. Toss your potatoes onto the sheet pan, and season them with the spices, garlic, and tbsp of olive oil. Toss well until they're fully coated.
  3. Bake the potatoes for 20 minutes.
  4. While the potatoes bake, toss the baby broccoli with the olive oil, spices and lemon juice in a small bowl. Set aside until the potatoes are done.
  5. After 20 minutes, remove the potatoes from the oven, and give them a quick toss. Layer the baby broccoli onto the sheet pan.
  6. Pat your salmon dry, and place it in the center of the baking sheet. Season it generously with salt u0026 pepper. Rub the crushed garlic on top and season it with the chili powder. Finish it off with the tsp of olive oil, lemon juice and 2-3 fresh lemon slices.
  7. Place the sheet pan back into the oven for 15 minutes, then place it under the broiler for 2-3 minutes to brown.
  8. Serve fresh as is, or with your favorite side salad!
