Crispy Baked Zucchini Chips

Ingredients

  • 2 large zucchini
  • 1 egg, whisked
  • 3/4 cup bread crumbs or Panko crumbs
  • 1/2 tsp garlic powder
  • Pinch of salt u0026 pepper
  • Olive oil cooking spray

Directions

  1. Preheat oven to 375 F.
  2. Slice each zucchini into coins.
  3. Combine the breadcrumbs with the seasoning in a shallow plate.
  4. Dip each zucchini coin into the whisked egg, and coat in breadcrumbs.
  5. Bake for about 30 minutes flipping halfway through, until golden brown.
  6. Serve fresh with a side of marinara.
