Crispy Baked Carrot Fries

Ingredients

  • 2 lbs carrots, peeled and sliced into 2u0022 sticks
  • 2 tbsp olive oil
  • 1 tbsp tapioca flour
  • 1 tsp garlic powder
  • 1/2 tsp salt, plus more to top
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp smoked paprika

Directions

  1. Preheat your oven to 400 F
  2. In a large mixing bowl, toss the carrot sticks with the olive oil and spices
  3. Once fully coated, mix together with the tapioca flour
  4. Layer your carrots onto a large baking sheet, making sure they don't overlap. I don't use any parchment with these so that they come out extra crispy!
  5. Bake the carrots for 40-45 minutes. Flip them after 25 minutes, and continue baking for an addition 15-20 minutes until brown and crisp.
  6. Top them with a sprinkle of salt and dried parsley. Serve with your favorite condiments!
