Add the cottage cheese to a food processor or blender and blend until smooth.
Add the flour, baking powder and salt to a bowl and mix. Pour in the cottage cheese and combine with your hands until a dough forms. This will take a few minutes of kneading with your hands to fully incorporate the cottage cheese into the flour. Sprinkle in extra flour as needed until the dough is easy to work with.
Divide the dough into two, or keep as one large pizza. Lightly sprinkle some flour over parchment paper and roll out the dough. Place onto a parchment lined baking sheet.
Pre-bake the crusts for 8-10 minutes.
Remove the crust and add your sauce, cheese, and any toppings you like. Lightly drizzle the pizza with olive oil
Bake for another 8-10 minutes. Serve right away for best results.
