Preheat your oven to 350 F
In a large mixing bowl, whisk together the egg, coconut oil, coconut sugar, applesauce, and vanilla.
Pour in the oats, oat flour, cinnamon, salt and baking soda and stir together until evenly incorporated.
Line an 8 x 8 baking dish with parchment paper, and pour the batter in. Spread evenly to smoothen out the top.
Bake for 18-20 minutes, until the edges begin to brown and the top is firm to touch. Let cool completely before icing.
For the icing, whisk together the cream cheese, maple and vanilla extract until a thick glaze forms. Use a whisk to help break up any clumps. Add water by the tbsp if needed to thin.
Once the bars are cooled, top with the cream cheese glaze and slice into 9 large or 12 smaller bars.
Keep refrigerated for up to 1 week if adding the icing, or leave in an air tight container on the counter for up to 4 days with no icing.
