Chopped Tuna Salad

Ingredients

  • 1 head romaine lettuce
  • 6 -8 oz canned tuna, drained
  • 2 cups spinach
  • 2 -3 hearts of palm
  • 2 carrots, peeled and sliced into rounds or sticks
  • 1/4 cup pickled jalapenos
  • 1/4 cup banana peppers
  • 1 tbsp harissa
  • 2 tbsp kalamata olives

Red Wine Dressing

  • 2 -3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Juice from 1/2 lemon
  • 1 tsp dijon mustard
  • Salt u0026 pepper

Directions

  1. Layer all of the salad ingredients, including the harissa, on top of each other over a large cutting board
  2. Using a sharp chef's knife, finely chop all of the ingredients together
  3. Transfer the chopped salad to a bowl and toss together with the dressing.
  4. Serve as is or with your favorite crackers. I love using leftovers in a sandwich or wrap.
