Chocolate Chip Cookie Bars

Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1 egg
  • 1/2 cup coconut sugar
  • 1/3 cup softened butter, vegan or regular
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/3 cup chocolate chips
  • 1/2 cup chocolate candies, plus more to top
  • 1/2 tsp salt
  • Sea salt to top, optional

Directions

  1. Preheat your oven to 350 F
  2. Combine the egg, sugar, butter and vanilla in a bowl and whisk well for 1-2 minutes until smooth.
  3. Add in the almond flour, oat flour, baking soda and salt and mix together until a dough forms.
  4. Fold in the chocolate chips and chocolate candies.
  5. Line a medium baking dish (about 10u0022 by 7u0022) with parchment paper, and flatten the cookie mixture evenly. Top with a few extra pieces of chocolate candies.
  6. Bake for 18 minutes.
  7. Remove from oven, let cool and slice into squares.
  8. Keep stored in an airtight container for up to 1 week.
