Cheddar Zucchini Fritters

Ingredients

  • 2 large zucchini, grated- measured about 2 cups before squeezing out the liquid
  • 1 cup shredded cheddar cheese, use a vegan brand if needed
  • 1/2 white onion, diced
  • 2 eggs, whisked
  • 1/2 cup oat flour
  • 1 scallion, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Olive oil, to drizzle

Za'atar Yogurt Dip

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tbsp za'atar spice
  • 1 tsp olive oil

Directions

  1. Preheat the oven to 400 F
  2. Grate the zucchini with a box grater or using your shredding disc in your food processor. Transfer the grated zucchini into a kitchen cloth, and squeeze out as much liquid as possible.
  3. Place it into a large bowl with the chopped onion, scallions, spices and eggs. Mix together until evenly incorporated.
  4. Fold in the cheddar cheese and the oat flour, and mix well to make sure everything is mixed through- I like using my hands
  5. Line a large baking sheet with parchment paper. Scoop out 2 tbsp worth of the mixture onto the baking sheet, about 1 inch a part from one another. I like to use my 2 tbsp cookie scoop for this. Gently flatten the tops with your fingers.
  6. Lightly drizzle the fritters with olive oil. Bake for 12 minutes, flip them, and bake for additional 5 minutes.
  7. Enjoy with the za'atar yogurt dip or your dip of choice!
