Prepare the balsamic marinade by whisking together the balsamic vinegar, maple syrup, dijon mustard, garlic and salt & pepper. Set aside.
Slice the salmon into 1" cubes. Toss in a bowl with the salt, pepper, Italian seasoning and 2 tbsp of olive oil.
Heat a pan on medium heat, then drizzle in another tbsp of olive oil. Once hot, add the salmon cubes into the pan. Cook on medium heat for about 5 minutes, then flip for another 3-4 minutes until the salmon has browned.
Using a paper towel, soak up some of the oil from the pan. Pour the marinade into the pan and spoon over the salmon bites. Cook on a medium/low flame until the glaze thickens and bubbles, for about 3-4 minutes.
Garnish with extra Italian seasoning when serving.
