Baked Feta Pasta with Harissa

Ingredients

  • 8 oz pasta of choice, I used Ditali pasta
  • 1/4 cup reserved pasta water
  • 8 oz block of feta cheese
  • 1 red bell pepper
  • 1/2 red onion
  • 4 garlic cloves, sliced
  • 1 cup spinach, chopped
  • 1 tbsp harissa
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 tsp Italian seasoning
  • Olive oil

Directions

  1. Preheat the oven to 400 F.
  2. Chop the pepper into 1 u0022 pieces and dice the onion. Add them to a large baking dish with the sliced garlic, harissa, salt, pepper and red pepper flakes. Drizzle generously with olive oil and toss everything together until combined.
  3. Place the block of feta in the center of the dish. Top with the Italian seasoning and a light drizzle of olive oil.
  4. Bake for 30-35 minutes, until the veggies and feta have softened.
  5. Prepare the pasta as instructed on the package and reserve 1/4 cup of pasta water. Drain and set aside.
  6. Once the veggie are done, remove the baking dish from the oven and mash the feta down, mixing it together with the veggies to form the sauce.
  7. Add in the reserved pasta water, spinach and cooked pasta and mix well until evenly combined.
  8. Serve warm with your favorite protein.
