Heat a small saucepan with the coconut oil on medium heat, then add in the chopped apple and cinnamon. Cook together for about 5 minutes, stirring occasionally, until the apples have softened.
While the apples cook, combine all of the overnight oats ingredients in a bowl or large pyrex container and whisk together until evenly mixed.
Once the apples are ready, mix them into the overnight oat mixture. Refrigerate for at least 4 hours or overnight to set.
When ready to serve, top with plain or vanilla yogurt and an extra sprinkle of cinnamon. Keep refrigerated for up to 5 days.
