Preheat your oven to 350 F
In a large bowl, whisk together your eggs, oil, sugar, applesauce, apples, and vanilla until smooth
Add in the almond flour, oat flour, cinnamon, salt, baking powder and baking soda and gently combine using a spatula.
Line a 12 count muffin tray with paper liners and pour about 1/3 cup of batter into each cup
Optional step: sprinkle the top of your muffins with a small pinch of brown sugar.
Bake the muffins for 25 minutes, until firm to touch and a toothpick comes out clean.
Let cool for 10 minutes and enjoy!
Keep stored in a cool place for up tp 3 days, refrigerate for up to 1 week or freeze for up to 2 months.
