Pistachio herb salmon is a vibrant spring recipe that’s packed with fresh flavor. Serve it at your next weekend lunch or as a weeknight dinner for a crowd pleasing dish.

Pistachio Herb Salmon

I’m all about fresh, simple recipes once spring and summer roll around, and I always find myself craving more herby recipes with colorful citrus, lightened up side dishes and a hearty protein. This pistachio herb salmon hits all of those marks with a marinade made from blended pistachios, mixed herbs, honey and fresh citrus.

The marinade ingredients get blended in a food processor, then spread over a beautiful salmon fillet that’s baked until flakey. This recipe is the perfect way to use up any herbs you have in your fridge, and comes together in minutes.

This recipe is one of those dishes that will impress your guests, but can also be made for an easy family dinner. To add a little extra touch, I love to bake the salmon over layers of orange slices for an extra pop of color.

Pistachio Herb Salmon

What you’ll need to make pistachio herb salmon

  • Salmon fillet– about 1.5-2 lbs depending on the serving you’ll need
  • Roasted pistachios– I like to use roasted and salted pistachios, or flavored ones for an added touch
  • Fresh herbs– combined you’ll need about 1 packed cup of herbs. I used a blend of parsley, cilantro, basil and dill
  • Olive oil
  • Lemon juice + zest
  • Honey
  • Salt

Blend the marinade

In a small food processor or blender, add in the pistachios, herbs, olive oil, lemon juice, zest, honey and salt. Pulse or blend until the mixture is thick and fully chopped, similar to a pesto consistency.

This marinade is so delicious on salmon, but can also be used for tofu, chicken or even vegetables.

Prepare the salmon

Lay your salmon fillet over some sliced oranges, I used navel oranges and blood oranges. This step is totally optional, but adds a pop of contrast color.

Season the salmon with salt and pepper, then spread the pistachio herb crust over the top.

Bake the salmon

Preheat the oven to 375 F, and bake the salmon for around 18-20 minutes. Bake time will vary depending on the size and thickness of the fish, but the salmon should flake easily with a fork when done.

The salmon is fresh, zesty and has a hint of sweetness. It truly melts in your mouth and is a definite crowd please for your next gathering!

Ingredients

  • 1.5-2 lbs salmon
  • 1 cup tightly packed herbs- cilantro, parsley, dill, basil
  • 1/4 cup roasted pistachios
  • 1/4 cup olive oil
  • Juice from 1 lemon
  • 1 tbsp lemon zest
  • 1 tbsp honey
  • Salt & pepper to taste

Directions

  1. Preheat the oven to 375 F
  2. Add the herbs, pistachios, olive oil, lemon juice, zest, honey and pinch of salt to a food processor or blender. Blend together to form a thick, herby paste
  3. Place the salmon on a sheet-pan or baking dish- I like to place it over sliced oranges for a pop of color. Season the salmon with salt and pepper, then spread the pistachio herb marinade over the top
  4. Bake for about 18-20 minutes, depending on the size and thickness of the fish, until the fish flakes easily with a fork
