
Last week a few people asked me for more simple weeknight dinner recipes, so I’m super excited to share this delicious pistachio crusted salmon! It’s SO flavorful, and seriously takes all of 5 minutes to throw together.
Serve it with a side of rice and your favorite roasted veggies, and you have dinner ready in under 30 minutes. Sounds delightful, doesn’t it?

Whenever people tell me they’re trying to eat healthier, I alway emphasize that incorporating more nutritious foods doesn’t need to complicated or require hours of prep. Sure, a little inspiration for what to make can be helpful, but hey- that’s what i’m here for 🙂
This meal seriously comes together so quickly, and pairs well with so many side dishes. I even left a few ideas for you below!
Here’s what you’ll need to make the salmon:
- salmon fillets, I like to keep the skin on
- dijon mustard
- olive oil
- crushed garlic
- lemon juice
- honey
- pistachios
- salt & pepper

We eat fish at least twice a week, so I like to try new things from time to time. I’ve had pistachio crusted salmon on my mind forever, and it’s definitely going to be on repeat over here.
The salmon is brushed in dijon mustard, lemon juice, a dash of honey and salt and pepper, then topped with crushed pistachios. It’s baked for 12-15 minutes, and comes out super soft and flakey!
Would this work with a large piece of salmon?
Definitely! My salmon was about 1.2 lbs, so be sure to double all of the ingredients if you’re using a large piece of salmon. This dish would be perfect to serve any guests!

I served this dish with a side of basmati rice and roasted broccoli, but it would pair will with just about anything, or even over a salad.

Pistachio Crusted Salmon
Ingredients
- 3 salmon fillets, between 5-6 oz
- 1 tbsp dijon mustard or stone ground mustard
- 1 tbsp olive oil
- 1 clove of garlic, crushed
- 1 tbsp lemon juice
- 1 tsp honey
- 1/4 cup crushed pistachios, roasted and salted
- Salt & pepper
Directions
- Preheat your oven to 375.
- Pat each salmon fillet dry, and season each one generously with salt and pepper.
- In a small bowl, whisk together the mustard, lemon, garlic, olive oil and honey.
- Brush each salmon fillet with the mustard mixture, and then top with the crushed pistachios. Gently press them down so that they stick.
- Bake the fish for 12-15 minutes, depending on the thickness. If you’re baking a larger uncut piece, time may range up to 18 minutes.
- Serve fresh with your favorite sides!



I have a question. My mother used to make this. She’ll catch on if I dare to ask anything about it, it would be out of nowhere and unusual for me lol, but I want to surprise her…but I’m not sure what KIND of salmon she used to use.
It was one that wasn’t tough in any way, it was VERY silky and fell apart in your mouth; just delicious.

Hi Cait, I would suggest Atlantic salmon for this recipe. The taste and texture are exactly how you described and it could be found in mostly all grocery stores!
