Homemade granola is surprisingly so easy to make, and can be flavored so many different ways. These maple cinnamon granola clusters are the perfect fall-flavored snack to make this season, and are made with only 8 simple ingredients.
Serve it over yogurt, with your favorite milk, or as a snack when you want something sweet.

I love serving them with vanilla Greek yogurt and cinnamon sauteed apples for a warm and cozy breakfast.

How to make homemade maple cinnamon granola
The base of any granola recipe is rolled oats, sweetener, oil, and the flavorings. There are so many ways to flavor your granola, but here’s what you’ll need for this delicious maple cinnamon flavor:
- Rolled oats
- Chopped walnuts or pecans, or a mix of both
- Refined coconut oil
- Pure maple syrup
- Coconut sugar
- Cinnamon
- Vanilla extract
- Salt
Toss everything together in a bowl, then flatten the mixture onto a baking sheet. Bake on a low temperature for about 25-30 minutes, until crispy! The hardest part is waiting for it to cool to break it apart, but definitely worth it! 🙂
Pro tip: add some freeze-fried apples to the mix after the granola is baked for a fall-inspired apple cinnamon flavor!

Maple Cinnamon Granola
Ingredients
- 2 cups rolled oats
- 1 cup chopped walnuts or pecans, I used 1/2 cup of each
- 1/4 cup coconut oil, melted. Use refined oil for a neutral taste
- 1/3 cup pure maple syrup
- 1/4 cup coconut sugar
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
Directions
- Preheat the oven to 325 F.
- In a large bowl, combine the coconut oil, maple syrup, coconut sugar, cinnamon and vanilla extract and whisk until smooth.
- Fold in the oats, nuts, and salt and stir together until combined.
- Line a medium baking sheet with parchment paper and flatten the mixture on to the pan. Form one large section in the center of the sheet pan, pressing the mixture together so that it’s compact.
- Bake for 25-30 minutes, until the top is golden brown.
- Let it cool completely, for at least 30-40 minutes before breaking into clusters.
- Store in an airtight container for up to 2 weeks.
