Marinated Feta

Ready in just 10 minutes, this lemony herb marinated feta recipe is the ideal summer snack or appetizer. It’s made with cubed feta thats marinated in olive oil, lemon zest, chili flakes and fresh herbs. Serve it as a snack with some olives, nuts and toasted bread.

I always have a block of feta in my fridge, and love whipping this up for a quick add-on to my snack plates or salads throughout the week.

This recipe comes together in minutes and is my favorite to serve with some toasted bread. If you plan to serve it as a side dish or appetizer with a larger meal, here are a few recipes to pair with it-

What you’ll need to make marinated feta

This recipe can be made in so many ways, with endless marinade possibilities. Here’s how I made it-

Feta cheese– you can use any feta you like, and even a vegan feta cheese for a plant-based version

The marinade: the simple marinade is made from olive oil, peeled lemon rind, fresh parsley, oregano, and red pepper flakes

Add ons: when serving, I love to mix in some pitted green olives or whole almonds for some crunch

  1. Cut the block of feta into 1″ cubes
  2. Combine the olive oil with the lemon rind, chili flakes, parsley and oregano
  3. Add the feta to a jar or container, and pour the olive oil over the cheese, then mix well
  4. Serve right away, or let it marinate for a few hours before serving

Serving suggestions

The feta cheese can be enjoyed right away, or prepared a few hours or day in advance. I suggest letting the cheese reach room temperature before serving since the olive oil can harden after refrigerating.

To serve, I love to plate it in a small bowl and pair it with toasted bread or crackers, with a side of colorful veggies as an appetizer or snack. You can top it with a drizzle of honey for some added sweetness, too.

Ingredients

  • 8 oz block of feta
  • 1/3 cup extra-virgin olive oil. For extra flavor substitute a flavored olive oil like lemon, basil or chili
  • Shaved lemon peel from 1/2 a lemon
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh chopped parsley
  • 3-4 fresh oregano stems or sub 1/2 tsp dry oregano
  • 1/2 cup green olives optional

Directions

  1. Using a vegetable peeler, shave off 2-3 pieces of a lemon peel, then slice the peel into thin strips.
  2. Add the lemon strips to a small mixing bowl with the herbs, olive oil and red pepper flakes.
  3. Cut the feta into 1″ cubes, then add it to the oil mixture with the olives. Toss together to coat evenly.
  4. You can serve right away, or let the feta marinate for a couple of hours in the fridge.
  5. After refrigeration, let the feta sit at room temperature for at least 30 minutes before serving.
