Hot Honey Salmon Bites

We can’t get enough of these hot honey salmon bites in our house. The salmon is seasoned with a few simple spices then baked until crisp. It gets topped with hot honey, lime juice, and lime zest for the perfect flavor combination. 

I love them over a fluffy bowl of white rice with a side salad or some roasted veggies.

Easy Weeknight Meals

Last week, my husband worked from home so I made sure to meal prep a few things to have on hand for lunch. I normally base my proteins around my grains, and this time I made a big batch of U.S-grown long-grain rice (Jasmine is my favorite!). 

Planning my meals ahead of time is an easy way to cut down on food waste, and also saves time during the day.

Rice is one of my go-to carbs to batch cook for meal prep because it’s versatile, affordable, and can be used in SO many recipes. 

For our lunches last week, I made a big batch of U.S-grown Jasmine rice to served it in three ways:

  • first with these Hot Honey Salmon Bites
  • second with my vegetarian burrito bowls
  • and third with my crispy buffalo tofu bites.

I personally love Jasmine rice for its buttery and almost nutty aroma. It adds the perfect flavor to all 3 of these dishes!

How to make Hot Honey Salmon Bites

These salmon bites come together in just a few simple steps. Here’s how to make them: 

  1. Start by removing the skin for about 1 ½ lbs of salmon then cutting it into cubes
  2. Season the salmon cubes with olive oil and a spice mixture made from salt, pepper, garlic powder, onion powder, and cayenne pepper
  3. Bake the salmon on 400 F for about 8-10 minutes, then set them under the broiler for 2 minutes
  4. Once they’re cooked, top them with fresh parsley, lime zest, lime juice, and a drizzle of hot honey

This 30-minute meal is a delicious way to eat more fish, and comes out so flakey and flavorful. Serve it over a big bowl of rice with your favorite veggie sides for a well-rounded weeknight meal. I can’t wait for you guys to try it!

Ingredients

  • 1 ½ lbs salmon, skin removed and cubed
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp cayenne pepper
  • Olive oil
  • Juice from 1 lime
  • 2 tsp lime zest
  • Hot honey (spicy honey)

Serve with

  • Jasmine rice, or rice of choice

Directions

  1. Preheat the oven to 400 F
  2. Remove the skin from the salmon and slice it into 1” cubes. Add the cubes to a large bowl and drizzle with about 2 tbsp olive oil. Add in all of the spices and toss together to coat the salmon
  3. Transfer the salmon cubes to a parchment lined sheet pan, making sure they don’t overlap
  4. Bake the salmon for about 8-10 minutes, then set it under the broiler for 2 more minutes
  5. Once ready, top with lime zest, fresh lime juice and a generous drizzle of hot honey. Serve over rice with your favorite veggie side.

This looks delicous and I’m definitely going to give it a try, but I’m a little confused about the “hot” honey. How much honey for one and I’m assuming by hot you mean warmed up although you do have spicy in brackets so do you add something else to it like cayanne or hot pepper flakes?? Thanks 🙂

Hey Wendy, hot honey is actually a spicy honey that you can buy- so sorry for the confusion. I just added a link to the recipe card of the hot honey I use, but there are many varieties and brands. You can find hot honey in the condiment or honey section of most large groceries. If all you have around is regular honey, you can use that and add a pinch of red pepper flakes to add some heat. I normally drizzle it over the top, but for 1 person I would say 1-2 tsp is a good amount!
