Grilled Pesto & Peach Panini: Sweet, Savory, and Perfectly Toasted

There’s something special about a grilled sandwich with melted cheese, sweet summer peaches and juicy tomatoes. This grilled pesto and peach panini is hits all of the marks for something savory and hearty, and comes together in minutes for a simple lunch or lightened up dinner.

I love to serve this with a side of Italian dressing for dipping, and a fresh salad on the side for added nutrients.

The peaches are the true star of the recipe, and bring a juicy, floral sweetness that balances the savory ingredients so well. They balance out the herby pesto while offering a bright and fresh touch to this warm, grilled sandwich.

Ingredients you’ll need for pesto and peach panini

  • Sesame french bread, or a similar soft bread with sesame seeds. I buy my sesame loaf from my local kosher bakery
  • Cheese– I used a mix of muenster and provolone cheese
  • Heirloom tomatoes– seasoned with salt & pepper
  • Yellow peaches– ripe yellow peaches that add natural sweetness
  • Pesto– homemade or store-bought
  • Arugula dressing in Italian dressing, or your favorite dressing

Step 1: Layer It Up

Spread pesto generously on both slices of your bread. Add a layer of cheese, arugula, a few peach slices, tomato slices and more cheese then sandwich together

Step 2: Press and Grill

Heat a skillet or panini press over medium heat. Brush the outside of the bread lightly with olive oil or butter. Grill until the bread is golden and crispy, and the cheese is gooey and melted.

Step 3: Slice and Enjoy

Let the panini rest for a minute, then cut in half and enjoy while warm.

Pair this panini with a simple arugula salad tossed in lemon juice and olive oil. It’s crisp, savory and has the perfect touch of sweetness. You guys are going to love it!

Ingredients

  • 1 loaf of sesame french bread
  • 2 cups arugula
  • 2 tbsp Italian dressing, or dressing of choice
  • 4 slices muenster cheese
  • 4 slices provolone cheese
  • 2 tbsp pesto
  • 1 yellow peach thinly sliced
  • 1/2 heirloom tomato thinly sliced
  • Salt & pepper

Directions

  1. Toss the arugula with the Italian dressing.
  2. Slice the loaf open and spread the pesto onto both sides. Add the sliced muenster cheese, followed by the arugula, sliced tomatoes seasoned with salt & pepper, sliced peaches and provolone cheese.
  3. Heat a grill pan or panini press with a drizzle of olive oil. Grill the sandwich for about 3 minutes per side on a pan, or for about 5-6 minutes total in a panini press until the cheese melts.
  4. Serve with extra dressing for dipping.
