You know what’s better than a 1 minute dessert? A 1 minute dessert that you don’t have to share! These gluten-free mug cakes are my absolute favorite thing to whip up when that sweet craving hits, but I want something quick.

We’ve got S’mores, Birthday Cake, and a classic Chocolate Chip flavor. They’re gluten-free, dairy-free and so easy to make!

Gluten-free Mug Cake

Last year, at the beginning of the the pandemic, I became obsessed with making mug cakes. On weeks I wasn’t testing any baked goods, these little guys always came in handy for an after dinner dessert.

I loved all of the different combinations there were, so they were always easy to switch up.

How to make a gluten-free mug cake

The base of these mug cakes are all the same, which make it that much easier! Here’s what you’ll need:

  1. Oat flour- I find that pre-bought oat flour is best, but you can make your own by blending rolled oats in a blender until they’re fine like flour
  2. Almond flour
  3. Egg yolk- the yolk is what helps with the moisture and fluffiness. If you wanted to double the recipe, you can use the whole egg!
  4. Dairy-free milk
  5. Neutral tasting oil- I’ve switched off between olive and avocado
  6. Pure maple syrup
  7. Vanilla extract
  8. Baking powder

S’mores Mug Cake

For the s’mores flavor, you prep the base of the cake, and mix in dairy-free chocolate chunks and marshmallows. I love using vegan marshmallows for this!

Chocolate Chip Mug Cake

For the classic chocolate chip flavor, all you’ll need is chocolate chips to mix in and some sea salt to top. If you’re feeling fancy, you can top your chocolate chip mug cake with some vanilla ice cream!

Birthday Cake Mug Cake

For the birthday cake flavor, you’ll mix in some rainbow sprinkles to the batter. I love topping mine with dairy-free whipped cream.

These gluten-free mug-cakes are such a delicious treat when you’re craving something in a hurry, or just want to enjoy a single-serve dessert!

Ingredients

  • 2 tbsp oat flour
  • 1 tbsp almond flour
  • 1 egg yolk
  • 1 tbsp neutral oil, I like olive or avocado oil
  • 1 tbsp non-dairy milk, I use unsweetened almond milk
  • 1 tbsp maple syrup, or other sweetener
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder

S’mores Flavor

  • 2 large marshmallows, cut into pieces, or 2 tbsp mini marshmallows. I like using these vegan marshmallows
  • 1 tbsp dark chocolate chips or chunks

Chocolate Chip Flavor

  • 1-2 tbsp dark chocolate chips
  • Sea salt to top

Birthday Cake

  • 1 tbsp rainbow sprinkles
  • Whipped cream, to top

Directions

  1. In a greased mug or microwave safe ramekin, whisk together the egg yolk, oil, milk, maple syrup and vanilla extract.
  2. Mix in the oat flour, almond flour and baking powder and stir until its fully incorporated.
  3. Whisk in your desired toppings, reserving some to top.
  4. Place the mug over an oven safe plate (to prevent overflow), and microwave for 1 minute. If the top of the cake is still wet, microwave for an additional 30 seconds.
