Gluten-free Dark Chocolate Cookie Bars

Cookie bars are basically chocolate chip cookies in bar form, but are so much easier to make, and don’t require chilling the dough before baking.

These grain-free dark chocolate cookie bars are made with some of my pantry staples. They’re the perfect dessert for Passover or all year round!

Dark Chocolate Sea Salt Cookie Bars

These cookie bars are soft-baked with the perfect crisp edges. The combination of both chocolate chips and chunks give them the ultimate ratio of cookie:chocolate.

They’re grain-free and dairy-free, but honestly you’d never guess it!

What you’ll need to make these Gluten-free Dark Chocolate Sea Salt Cookie Bars

This recipe was based off of my chocolate chip cookie bar recipe, with just a few modifications. Here’s what you’ll need for this recipe:

  • Almond flour- fine almond flour is my go-to for baking, like this one
  • Tapioca flour- tapioca flour is a starchy flour that’s perfect for most gluten-free baked goods. It helps bind the batter, and adds a crisp to these cookie bars
  • Eggs
  • Coconut sugar
  • Coconut oil- I like to opt for a refined version for a neutral tasting oil
  • Dark chocolate chips and chocolate chunks
  • Flakey sea salt

These cookie bars are made with simple ingredients, and prepped all in one bowl! They just melt in your mouth and have the absolute perfect texture.

I have not tested any substitutions for this recipe, but you’re welcome to try them or ask my opinion in the comments!

This one-bowl recipe is simple to make, so delicious, and the perfect holiday dessert! You guys are going to love it.

Ingredients

  • 1 cup almond flour
  • 1/2 cup tapioca flour
  • 3/4 cup coconut sugar
  • 1/3 cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips
  • 1/3 cup dark chocolate chunks
  • Flakey sea salt to top

Directions

  1. Preheat the oven to 350 F
  2. In a large bowl, whisk together the egg, sugar, oil and vanilla extract until smooth.
  3. Add in the almond flour, tapioca flour, baking soda, baking powder, salt, and chocolate chips. Stir together with a rubber spatula until evenly incorporated
  4. Line an 8 x 8 pan with parchment paper, then flatten the mixture into the pan.
  5. Bake for 15-18 minutes. Remove from oven and let cool for 10 minutes before slicing. You can press a few extra pieces of chocolate chunks into the top after removing the pan from the oven.
  6. Sprinkle generously with sea salt, slice into 9 or 12 bars and enjoy!
  7. Keep stored at room temperature for 1 week, or freeze for up to 3 months.
