They’re topped off with a simple cream cheese icing, which can be made dairy-free by using a vegan cream cheese!

Cinnamon Oatmeal Bars

These oatmeal bars are an old recipe of mine that I shared over a year ago to Instagram. A follower recently reminded me of them, so I knew I had to get them on the blog ASAP! They’re such a perfect little treat to make.

These cinnamon oatmeal bars are naturally gluten-free (just be sure to use certified gluten-free oats), and are dairy-free friendly. Lightly sweetened with a little coconut sugar and applesauce, and come together in about 30 minutes.

What you’ll need to make Cinnamon Oatmeal Bars

  1. Rolled oats– oats add the perfect texture, and are a good source of whole-grains, vitamins, minerals and antioxidants
  2. Oat flour– pre-made oat flour is ideal for its fine texture, but you can blend some rolled oats to make your own oat flour if needed!
  3. Coconut sugar
  4. Apple sauce– I love baking with applesauce since it adds a delicious sweetness and the best texture!
  5. Coconut oil– I tend to bake with refined coconut oil for a neutral taste.
  6. Egg
  7. Vanilla extract
  8. Cinnamon

These bars can be sliced into 12 smaller snack bars, or 9 larger breakfast sized bars. They’re a delicious sweet fix off the morning, and packed with feel-good ingredients.

Ingredients

  • 1 cup quick-cooking rolled oats
  • 1/3 cup oat flour
  • 1 cup unsweetened applesauce
  • 1/3 cup softened coconut oil, use refined oil for a neutral flavor
  • 1/4 cup coconut sugar
  • 1 egg, at room temp
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp baking soda

Cream Cheese Glaze

  • 1/3 cup cream cheese, regular or vegan
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • Water, if needed to thin

Dairy-free Cashew Glaze

Directions

  1. Preheat your oven to 350 F
  2. In a large mixing bowl, whisk together the egg, coconut oil, coconut sugar, applesauce, and vanilla.
  3. Pour in the oats, oat flour, cinnamon, salt and baking soda and stir together until evenly incorporated.
  4. Line an 8 x 8 baking dish with parchment paper, and pour the batter in. Spread evenly to smoothen out the top.
  5. Bake for 18-20 minutes, until the edges begin to brown and the top is firm to touch. Let cool completely before icing.
  6. For the icing, whisk together the cream cheese, maple and vanilla extract until a thick glaze forms. Use a whisk to help break up any clumps. Add water by the tbsp if needed to thin.
  7. Once the bars are cooled, top with the cream cheese glaze and slice into 9 large or 12 smaller bars.
  8. Keep refrigerated for up to 1 week if adding the icing, or leave in an air tight container on the counter for up to 4 days with no icing.

Hi Gal – your Instagram version of this is different, and doesn’t use cream cheese. It’s just cashews for the glaze. Are you able to add that in as an option here or do you have another recipe page? I save so many of yours 🙂

Hey Victoria, you can try 1 cup pumpkin puree, or I would suggest a cup of finely grated apples!

I haven’t tried with any substitutes! You should be able to swap 2 mashed bananas 🙂
