Soft-baked blueberry oatmeal bars are the perfect breakfast or snack to prep for busy mornings! Made with rolled oats, lightly sweetened with coconut sugar, and are bursting with blueberries in every bite.

Baked Oatmeal Bars

Baked oatmeal gained so much popularity on TikTok over the past few months. It’s easy to make, convenient to have on hand, and can be customized to your liking!

These blueberry baked oatmeal bars are filled with whole grains, lightly sweetened, and are a perfect satisfying breakfast to start your day with.

What you’ll need to make baked blueberry oatmeal bars 

Rolled oats– the rolled oats give these bars their hearty texture, while providing whole grains and fiber. The recipe calls for quick-cooking oats, but if you don’t have any you can simply pulse your rolled oats in a blender for 10-20 seconds to chop them up!

Oat flour– oat flour is an affordable, nut-free flour that I love baking with. I prefer buying it pre-made since it’s a lot finer, but you can make your own by blending rolled oats until it’s fine like flour 

Coconut sugar– I love the caramel-like sweetness that coconut sugar provides, but you can also use light brown sugar. This recipe has less than half the amount of sugar than most other oatmeal bar recipes! 

Almond milk- I always opt for unsweetened almond milk, but any milk will work well in this recipe

Eggs

Coconut oil– when baking with coconut oil, I always use refined coconut oil for its neutral taste and flavor 

Blueberries

Cinnamon

Homemade bars are a healthier option than most other packaged breakfast bars, and can easily be frozen and defrosted as needed.

They’re based off of my Chocolate Chip Oatmeal Bars, which are always a hit in our house.

You can serve these cold, at room temperature, or warmed in the oven or microwave. Each bar is bursting with blueberries, and has the fluffiest texture.

Baked blueberry oatmeal bars are a nutritious breakfast or snack option to have around that are gluten-free, dairy-free and can even be made nut free by using a nut free milk.

They’re made with staple pantry items, and can be stored for up to a week or frozen for months!

Baked Blueberry Oatmeal Bars

Ingredients

  • 2 cups quick-cooking rolled oats
  • 1 cup oat flour
  • 1 cup unsweetened almond milk, or other plant-based milk
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/4 cup melted coconut oil, use refined oil for a neutral taste
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup blueberries, plus more to top
  • Optional: 1 tsp coconut sugar to sprinkle over the top

Directions

  1. Preheat your oven to 350 F
  2. In a large bowl, whisk together the eggs, sugar, milk vanilla and oil.
  3. Pour in the oats, oat flour, baking powder, salt and cinnamon and mix together until well combined.
  4. Fold in the blueberries and mix well. Line a medium sized baking dish, about 11″ x 7″, with parchment paper and pour the batter into the pan.
  5. Add some extra blueberries to the top of the batter, and sprinkle 1 tsp of coconut sugar over the top (optional)
  6. Bake for 30-35 minutes until the top is golden brown.
  7. Let cool for 10 minutes, remove the bars from the pan and slice into 12 squares.
  8. Keep refrigerated for up to 1 week or freeze for up to 2 months. Warm in microwave or oven when ready to serve.
