These cinnamon baked apples are truly the perfect fall dessert. They’re easy to make, taste amazing, and are topped with a delicious cinnamon oatmeal crumble.
The apples caramelize and become buttery soft, and pair so well with vanilla ice cream. It’s an easy weeknight treat the whole family will love!

What you’ll need to make baked apples
Apples– I love using honeycrisp for this recipe, but you can use any apple variety you like!
Rolled oats + oat flour– oats and oat flour make up the base of the crumb, and add the perfect crisp texture
Coconut sugar– I love sweetening my desserts with coconut sugar for its caramel-like taste, but brown sugar can be subbed if needed
Coconut oil– coconut oil helps bind together the ingredients into the perfect crumb. I prefer using refined coconut oil for its neutral taste
Cinnamon– for added flavor
Salt– to balance out the sweetness!

This dessert comes together in just a few simple steps:
- Slice your apples in half
- Sprinkle them with coconut sugar and cinnamon
- Prepare the oatmeal crumble, then press that into the apple halves
- Bake until soft and enjoy!

Bake Apples with Oatmeal Crumble
Ingredients
- 2 large apples, I used honeycrisp
- 1/2 cup hot water
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
Crumb Topping
- 1/3 cup rolled oats
- 1/3 cup oat flour
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
- 3 tbsp coconut oil, or vegan butter
- 1/8 tsp salt
Directions
- Preheat the oven to 375 F
- Slice your apples in half and lightly spoon out the center to remove the seeds.
- Place hot water in an 8 x 8 baking dish, then layer the apples in the pan skin side down.
- Sprinkle the coconut sugar and cinnamon over each apple half.
- For the crumb topping, combine all of the ingredients together in a bowl, and use your hands to work the coconut oil into the dry ingredients to create a crumb.
- Press the mixture over each apples. *You can pour any remaining crumb topping directly into the pan, it will turn into a delicious oatmeal!
- Cover the pan with foil and bake for 25 minutes. Remove the foil then bake uncovered for an additional 15-20 minutes, until the apples begin to soften.
- Serve warm with vanilla ice cream!


I am making this right now for the second time this week. I substituted brown sugar and Irish butter because it was what I had on hand. I also added 1/3 C walnuts. Perfect for breakfast or a snack.
