Walnut & Pistachio Crusted Flounder

Crispy baked flounder is the perfect weeknight meal! Serve it with a fresh salad and your favorite sides for a simple, well-balanced dinner. It’s a delicious way to change up your dinner routine, and it’s packed with heart-healthy fats.

The flounder fillets are brushed with a honey mustard glaze, then topped with a crumb mixture made of crushed walnuts, pistachios and breadcrumbs. They get baked and broiled for the ultimate crisp, and truly just melt in your mouth.

This recipe is easy enough to make for your family dinner, and fancy enough to make for your next holiday gathering. The walnuts and pistachios add delicious savory flavor, and the seasoned breadcrumbs add the perfect crunch.

This dish is so good with a side of smashed potatoes and kale salad. It’s best served fresh with a generous squeeze of lemon juice.

How to make walnut & pistachio crusted flounder

Here’s what you’ll need for this simple recipe:

  • flounder fillets- this recipe would also be delicious with sole, or even salmon!
  • seasoned breadcrumbs
  • walnuts & pistachios- I like to crush them in a bag using the bottom of a jar, but you can lightly pulse them in a food processor to chop them up
  • dijon mustard
  • honey- I love using a spicy honey for an extra kick
  • fresh parsley
  • salt, pepper & garlic powder

The fish comes out crisp and flakey, and is a delicious way to eat more seafood during the week. I can’t wait for you guys to try it- I know you’re going to love it!

Ingredients

  • 4 flounder fillets, about 1 lb
  • 1 1/2 tbsp dijon mustard
  • 1 1/2 tsp honey or maple syrup
  • 1 tsp olive oil, plus more to drizzle
  • 1/4 tsp garlic powder
  • Salt & pepper
  • Lemon juice, to top

Walnut Pistachio Topping

  • 1/4 cup seasoned breadcrumbs, use gluten-free if needed
  • 1/4 cup parsley, finely chopped
  • 1/4 cup walnuts
  • 2 tbsp roasted pistachios

Directions

  1. Preheat the oven to 400 F
  2. Place the flounder fillets on a sheet pan and season them with salt, pepper and garlic powder
  3. In a small bowl, combine the 1 1/2 tbsp of mustard, 1 1/2 tsp of honey and tsp of olive oil with a light pinch of salt and pepper. Brush the mixture over each piece of fish
  4. Add the walnuts and pistachios to a bag and crush them finely using a jar or heavy item. Alternatively, you can chop them using a sharp knife or pulse them in a food processor.
  5. Combine the finely chopped nuts with the breadcrumbs and chopped parsley and sprinkle the mixture evenly over each fish fillet.
  6. Drizzle each piece of fish lightly with olive oil and bake for 12 minutes, then broil for 2-3 more minutes.
  7. Finish off with a generous squeeze of fresh lemon juice and serve with your favorite sides.

This recipe was delicious!!! We subbed the flounder for pangasus and the flavors worked amazing together. You get salty savoury flavors from the seasoning blend and crunchy texture from the nuts and breadcrumbs. The pistachios add a subtle sweetness which works so well. Will definitely be making again.

This looks amazing.
We avoid bread (my daughter is gluten free), would this recipe be highly compromised without the bread crumbs?

I personally love the added texture the crumbs bring, but it can be made without them. You can also use any GF breadcrumbs you like, or blend store brought grain free crackers into crumbs- I love the sea salt almond flour ones by Simple Mills!
