
These strawberry shortcake energy bites are a delicious grab-n-go breakfast or snack! They’re packed with fiber, healthy fats, and whole-grains, and have recently become a meal prep staple around here.

During the week I’m a snack machine, so I always try to have something easy around to grab from my fridge or freezer. Energy bites usually hold me over between meals, and have so many different variations to them!
Since we’re officially in February, and Valentine’s day is upon us, I decided to get a little festive.
These strawberry shortcake energy bites taste just like little strawberry cereal bites, and are packed with good-for-you ingredients!

The combination of oats and cashews in these bites really give them that cake-like flavor. The freeze-dried strawberries add such a delicious sweetness, and truly taste like candy.
What you need to make Strawberry Shortcake Energy Bites
ROLLED OATS: oats are a rich source of fiber, protein and iron. They’re loaded with important vitamins and minerals, like phosphorous, magnesium, zinc and folate
RAW CASHEWS: the subtle, creamy taste of raw cashews really helps give these energy bites that cookie flavor. They’re also a good source of omega-3 fats, protein, and vitamin E
CASHEW BUTTER– I highly suggest sticking to cashew butter for this recipe, but if you need a substitute, almond butter would be a good option!
MEDJOOL DATES– these sweet, caramel like dates are a great source of potassium, fiber, and calcium
PURE MAPLE SYRUP
FREEZE-DRID STRAWBERRIES– I get mine from trader joe’s or amazon
VANILLA EXTRACT
SALT

You blend all of the ingredients up in your food processor, then roll them into 2 tbsp sized balls. I can’t believe how simple and delicious these are.
The white chocolate drizzle is totally optional. I suggest drizzling half with chocolate and leaving half without. The chocolate ones can act more like a dessert, while the plain ones can be a quick breakfast or snack.

Strawberry Shortcake Energy Bites
Ingredients
- 1 1/2 cups rolled oats
- 1 cup raw cashews
- 1/2 cup creamy cashew butter
- 1/4 cup pure maple syrup
- 1/4 cup Medjool dates, pitted (about 3-4)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup freeze-dried strawberries, crushed
Topping
- 1/4 cup white chocolate chips
- 1 tsp coconut oil
- Freeze-dried strawberries
Directions
- Pour your oats and cashews into a food processor, and pulse them until they’re fine like flour.
- Add in your dates, and pulse again for a few times until the dates are chopped.
- Add in your cashew butter, maple syrup, salt, and vanilla and blend on low until a sticky dough forms. You may need to scrape down the sides a few times in between blending.
- Transfer the mixture to a bowl and stir in your crushed freeze-fried strawberries. Mix well.
- Using a 2 tablespoon cookie scoop, or wet hands, roll two tbsp worth of dough into balls. Layer them on a parchment lined tray.
- Once all the dough is rolled, freeze the bites for 20-30 minutes.
- Melt your white chocolate chips with the coconut oil in 30 second increments in the microwave for about 1 1/2 minutes.
- Remove your bites from the freezer and drizzle each one with the chocolate. Top with more crushed berries.
- Place them back into the fridge to set for a few minutes.
- Keep them stored in the fridge or freezer. I like storing half in the fridge to snack on, and half in the freezer. They’ll stay fresh in the freezer for up to 3 months.



Saw these on the something nutritious Instagram, and thought they would be such a fun treat to make for v day (I was right!) I had to make a few substitutions and these energy bites still turned out great! Here are the changes I made:
•natural almond butter (tj’s by me didn’t have natural cashew butter). Didn’t taste the almonds and worked great!
•I bought only one bag of freeze dried strawberries and it ended up being only 3/4 cup of freeze dried strawberries for the recipe. I’m sure having the other 1/4 cup of strawberries would have been great, but it still was delicious even missing this amount!
•topping: I don’t like white chocolate, so I made a Greek yogurt glaze to try something fun and still have a white coating on the outside. I made the Greek yogurt glaze with: 1.5 cups 2% Greek yogurt, 0.5 cups confectioners sugar (powdered sugar), 1 tsp vanilla extract and 1 tbsp water. I freezed the bites for 30 min for the coating to set and it was delicious!
