Spinach Chicken Burgers

If you’ve been craving a lighter, more wholesome take on the classic burger, these spinach chicken burgers are the thing to make. Packed with lean ground chicken, spinach, and simple spices, they deliver all the juicy satisfaction of a burger but with a fresh, vibrant twist.

The burgers are so easy to make and can double as meal prep. They pack in protein and greens that even picky eaters will love, and are finished with a squeeze of lemon. Serve them in a bun, in a salad, or as a side with your favorite veggie.

When it comes to serving, you can go classic or creative. I love serving them on a toasted bun with arugula, tomato, avocado, and a mayo bbq sauce. For a lighter meal, you can skip the bun and serve them over a grain bowl — think quinoa or brown rice, with roasted vegetables and a drizzle of tahini.

These burgers are great to make ahead for the week and refrigerate or freeze. They reheat beautifully, so you can enjoy them for quick weekday lunches or dinners.

Ingredients you’ll need:

  • Ground chicken
  • Breadcrumbs
  • Frozen or fresh spinach
  • Egg
  • Dijon mustard
  • Diced shallot
  • Seasonings: garlic powder, salt & pepper

Preparation

  1. Add the ground chicken to a bowl with the breadcrumbs, diced shallots, egg, mustard, spinach and seasonings. Mix well until evenly incorporated.
  2. With oiled hands, shape into 6 burgers. Place them on a parchment lined sheet-pan
  3. Generously drizzle the burgers with olive oil. Bake them on 400 F for about 18 minutes, flipping halfway. Set them under the broiler for the last two minutes to brown
  4. Serve with a toasted bun with all of your favorite toppings

Grill or bake

I chose to bake these chicken burgers for less hands-on work, but grilling them is a great option, too.

To bake: place the burgers onto a sheet pan lined with parchment paper. I like to drizzle some oil on the parchment before placing the burgers. Bake for 18 minutes on 400 F, flipping the burgers halfway through. Set them under the broiler for 2 minutes at the end to brown

To grill: heat a grill pan or skillet, and pour in about 1/4 cup olive oil. Once hot, place the burgers in the pan. Grill for about 5-6 minutes per side on a medium heat

Ingredients

  • 1-1.2 lbs ground chicken
  • 1 cup of frozen spinach thawed and liquid drained
  • 1/2 cup unseasoned breadcrumbs
  • 1 shallot finely diced
  • 1 egg
  • 1 tbsp dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Olive oil
  • Lime or lemon juice to top

Directions

  1. Preheat the oven to 400 F
  2. Line a sheet-pan with parchment paper and drizzle some olive oil.
  3. Add the ground chicken to a bowl with the breadcrumbs, egg, mustard, diced shallot and spices. Mix well with your hands until evenly incorporated.
  4. With oiled hands, shape the mix into 6 equal burgers. Place the burgers onto the pan, then drizzle each one with more olive oil.
  5. Bake the burgers for about 18 minutes, flipping halfway through. Set them under the broiler for 2 minutes at the end to brown.
  6. Serve with a salad or in a bun with your favorite toppings.
