Slow-roasted lemon dill salmon comes together so easily, and is a flavorful dish to make for dinner this week. Serve it with roasted potatoes or feta lentil salad for a well-rounded meal.

Lemon Dill Salmon
Slow roasting salmon is one of my favorite simple cooking methods that keeps the salmon juicy and full of flavor. You bake the salmon low and slow, leaving you with a flakey fish with delicious citrus dill flavor.
This dish is easy enough to make for a family weeknight dinner, and pretty enough to serve at your next dinner party. It’s made with the simplest ingredients and packs in so much flavor.

This recipe takes 10 minutes of prep time and comes together in one dish. The seasoned salmon is baked over a bed of thinly sliced red onion, green olives and lemon slices and topped with a few simple spices and fresh herbs.
I love serving this during the week with my harissa roasted potatoes or Halloumi Kale Salad with Harissa Dressing.


Ingredients you’ll need:
- Salmon– you can use anywhere between 1-1.2 lbs of salmon for this recipe, or 3-4 individual fillets
- Red onion and green olives– thinly sliced for the base of the dish
- Dill and parsley– for fresh herby flavor
- Lemon slices and lemon juice- for zesty flavor
- Olive oil
- Salt, pepper, red pepper flakes and garlic

How to make slow roasted lemon dill salmon
- Layer the salmon fillet over thinly sliced red onion, lemon slices and green olives
- Season the salmon with olive oil, garlic, salt, pepper and red pepper flakes then add chopped dill and parsley
- Slow-roast the salmon on 275 F for 30-35 minutes, depending on preferred doneness
- Top the salmon with fresh lemon juice when ready to serve

Slow-roasted Lemon Dill Salmon
Ingredients
- 1 -1.2 lbs salmon
- 1/2 red onion, thinly sliced or 2 shallots
- 1 lemon, half sliced into rounds
- 1/4 cup dill, chopped
- 1/4 cup parsley, chopped
- 1/4 cup green olives, sliced
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
Directions
- Preheat the oven to 275 F
- Add the thinly sliced onion to a baking dish with the sliced olives and 3-4 lemon slices.
- Place the salmon fillet over the top of the veggies then drizzle generously with olive oil, about 2 tbsp. Sprinkle the salt, pepper and red pepper flakes over the dish, then spread the crushed garlic over the salmon fillet.
- Spread the chopped dill and parsley over everything, then squeeze the other half of the lemon over the salmon.
- Bake for about 30-35 minutes, until the salmon flakes easily. If using a fillet larger than 1.2 lbs, baking time may vary.
- Garnish with more lemon juice and serve with your favorite sides.
