One of the things I prioritized during my last trimester was to slowly build a freezer stash of a few meals and snacks to be able to grab after giving birth. Now being officially two months postpartum, I can confidently say these meal prep recipes got me through those first few weeks.
My focus for this meal prep was recipes that were easy to grab and heat, packed with nourishing ingredients to keep me fueled- especially during my breastfeeding journey. While postpartum was my ultimate focus, these recipes can easily be part of anyone’s meal prep rotation since they can be made ahead and frozen for a few months.
Whether you work in an office, from home, or have little prep time during the week, these are some of my favorite freezer-friendly recipes.
What’s in my postpartum freezer?
My goal was recipes that are easy to grab and reheat, that offered variety for different cravings.

Spinach and Herb Breakfast Sandwiches
This recipe is made with whole wheat english muffins filled with muenster cheese and a herby omelette that’s baked in the oven for an easy, hassle-free recipe. These sandwiches are a delicious way to pack in some protein off the morning, and are an easy grab & go option if you’re on the run.

Black Bean Breakfast Burritos
A protein and fiber rich recipe made with scrambled eggs, sauteed vegetables and canned black beans. I love to serve these with sour cream, hot sauce and a side of avocado.

Black Bean Walnut Tacos
These crispy black bean walnut tacos are a hearty vegetarian dinner that come together in one pan, and are packed with veggies and plant-based protein. The beans and walnuts are cooked with sauteed onion, jalapeno and tomato in a homemade spice blend, then spooned into soft-shell tacos with shredded cheese and crisped on a pan.

Lemony Chicken Veggie Meatballs
Easy chicken patties full of veggies and zesty flavor. I prepped and froze a double batch of these without the lemon potato sauce, and served them over rice or in a wrap with a chopped salad and tahini sauce.

Spiced Peas and Meatballs
Spiced peas and meatballs are a hearty and cozy dish to serve over fluffy rice, cooked in a tomato based sauce with tons of warm spices. These were a staple for me growing up, and always something I crave when I need a home cooked meal.

Peanut Butter Energy Bites
They’re made with a few pantry ingredients that you most likely have on hand, like rolled oats, peanut butter, maple syrup and chocolate chips.
I love these energy bites because they’re a great make-ahead recipe, with so many variations to them, like these almond butter energy bites.

Banana Oatmeal Breakfast Cookies
These banana oatmeal breakfast cookies taste just like banana bread, but in cookie form. They’re a delicious, whole-grain option for a midday snack or light breakfast, and are naturally gluten, dairy and nut free.

Stuffed Dates with Nuts and Nut Butter
These stuffed dates with nut butter, nuts, dark chocolate and shredded coconut are one of my go-to treats to satisfy a sweet tooth.
A simple dessert that truly tastes like nature’s candy!

Toasted Coconut Granola
A delicious toasted coconut granola lightly sweetened with maple syrup, and made with rolled oats, chopped nuts and shredded coconut. I love making a double batch to sprinkle over yogurt or chia seed pudding.

Apricot Cashew Energy Bites
These apricot cashew energy bites are the perfect quick snack to stock your fridge or freezer with. They’re made with simple ingredients like dried apricots, medjool dates, raw cashews, and orange zest and offer a delicious boost of energy for a midday snack.
